Tomato & chickpea curry
Ingredients
- 2 garlic cloves
- 1 teaspoon garam masala
- 1 teaspoon turmeric
- 400ml can coconut milk
- 1 teaspoon ground coriander
- 400g can plum tomatoes
- 400g can chickpeas, drained and rinsed
- 2 large tomatoes
- quartered
- ½ small pack coriander, roughly chopped
- 1 tablespoon oil
- 2 onions
Method
- Heat the oil in a large pan and add the onions.Add the garlic and spices, and stir to combine.
- Pour in the coconut milk and season.
- Tip in the chickpeas and the tomatoes, and warm through.
- serve the Tomato & chickpea curry.

Crispy Aloo Pakoras
Ingredients:
2 cups potatoes
1/2 cup besan
2 tablespoons flour
2 tablespoons corn starch
1 tablespoon coriander seed crushed
1/4 teaspoon turmeric
1/4 teaspoon mango powder
1 tablespoon fennel seeds crushed
1/8 teaspoon asafetida
1-1/2 teaspoons red chili flakes
1 tablespoon ginger finely chopped
2 tablespoons cilantro chopped
1 tablespoon oil
1 teaspoon salt
Method:
1. The potatoes cut them in very small cubes.
2.Mix all the ingredients together except salt and potatoes,spice mix and salt and mix it well.
3.Heat the oil in a frying pan on medium high heat.
4.Put one piece of potato in the oil. The potato should raise to the top but not change color right away.
5.While putting the potatoes into oil, loosen them with your fingers to make sure the potatoes are separated
6.When they are done cooking, take them out of the oil with a slotted spoon. Place them on a paper towel to absorb the extra oil.

Ingredients:
- 2 tablespoon oil
- 1 onion
- 1 ginger
- 1 green chili
- ¼ teaspoon turmeric powder
- ½ teaspoon red chili powder
- 1 teaspoon dhania powder
- ½ teaspoon garam masala powder
- 2 tablespoon dhania patta
- salt
- 250 grams bhindi
- First rinse 250 grams bhindi in water.
- Then chop them in 1 to 1.5 cm roundels. keep aside in a shallow kadai or pan, heat mix the 2 tablespoon oil, onion,ginger and green chili.
- Then add turmeric powder, red chili powder, spice powders and coriander powder.
- Then add the chopped bhindi.
- Add salt as per taste.
- Cover the pan with a lid and cook the bhindi on a low flame. After every 3 to 4 minutes, do check the bhindi are uniformly cooked.
- Serve bhindi stir fry hot.

Gooseberry Pickle recipes
Ingredients
Gooseberry - 1 cup
Cilantro - 2 springs
Turmeric powder
Salt
Mustard seeds - 1 teaspoon
Urad Dal - 1 teaspoon
Channa Dal - 1 teaspoon
Ginger - 1" piece
Red chillies - 2
Green Chillies - 2
Curry leaves
Oil - 1 tablespoon
Rice - 1 cup
Method
1. Cook the rice, fluff it up with a fork and let it cool. You can also use leftover rice for this.
2. Heat oil in a pan a mustard seeds, urad dal and channa dal.
3. Add the chopped ginger, red and green chillie and curry leaves.
4. Add the gooseberry, turmeric powder and salt.
5. Mix in the cooked rice. Toss everything together.
6. Garnish with Cilantro.
7.Let it rest for few minutes before serving for the flavours to be absorbed by the rice.

JEERA RICE
- 2 teaspoons Ghee
- 2 teaspoons Cumin seeds
- Salt
- Black pepper corns
- 2 cups rice
Method
- Heat the ghee in a non-stick pan. Add the cumin seeds, pepper corns.
- When the cumin seeds begin to turn color, add rice , salt over it.
- The heat on medium and the rice gently till all of it gets coated with ghee and cumin tempering take it off the fire and serve with any curry.

Punjabi Aloo Amritsari Recipe
Ingredients:
250 gms potato
2 Onions
2 teaspoon garlic paste
1/2 teaspoon Ajwain
Salt
1/2 cup Besan
1 teaspoon Red powder
1/2 teaspoon Garam masala
1/2 teaspoon Annardana Powder
Oil For frying
Handful Corainder leaves
Preparation:
a) Cut aloo into long pieces.
b) Mix all ingredients besan, salt, ginger-garlic paste, ajwain seeds adding water and add 1 teaspoon of oil mix well.
c) Marinate potato pieces for 15 minutes.
d) Heat oil and deep fry the potato .
e) Heat 2 teaspoon of oil, add onions and saute till brown. and mix the salt, turmeric powder, red powder, annardana powder, garam masala
f)Add the potato. Simmer the flame and cook for another 5- 6 minutes.
g) serve punjabi aloo amritsari hot with paratha.

Ingredients
2 potatoes
2 teaspoon oil
1 teaspoon ginger garlic paste
2.25 white button mushrooms
¼ teaspoon turmeric powder/haldi
½ teaspoon red lal mirch powder
½ teaspoon jeera powder
½ teaspoon garam masala powder
2 tablespoon besan
1 tablespoon parsley
salt
1 tablespoon sooji
3 tablespoon oil
1 small onion
Method
1. Firstly steam 2 medium to large potatoes you can cook potatoes in a pan .
2. Drain the water.
3. When the potatoes are cooking.
4. Now heat 2 tsp oil in a pan.
5. Stir and saute the onions for two minutes .
6. Then add 1 teaspoon ginger garlic paste .
7. Add the chopped mushrooms.
8. On a medium flame saute the mushrooms.
9. Lower the flame and then add ¼ teaspoon turmeric
powder, ½ teaspoon red chilli powder, ½ teaspoon.
10. Mix the spices with the mushrooms.
11. Season with salt as per taste.
12. Add 2 tablespoon besan or gram flour.
13. Mix the besan.
14.Then add 1 to 2 tbsp chopped coriander leaves or parsley.
15. Now add this mushroom mixture.
16. Mix everything very well.
17. Take 1 tablespoon rava or sooji.
18. Heat 3 tablespoon oil in a tawa or a frying pan.
19. Flip once or twice to get a even colored golden crust and for even cooking.
20. Serve mushroom cutlet.

2.Put lentils in a pot with enough water to cover; bring to a boil.
3.Heat vegetable oil in a large skillet over medium heat cook in hot oil until caramelized, about 20 minutes.
4.Mix in the curry paste,curry powder, turmeric,cumin , chili powder,and ginger together in a large bowl.
5.Stir in the tomato puree, remove from heat and stir into the lentils.
