Chole Bhature

Ingredients:

Maida flour                    2 cups                                   
Sooji                              2 tablespoon
Baking powder              ¼ teaspoon
Sugar                             ½ teaspoon
Yoghurt                         ½ cup
Salt to tasteChana
Chole                            1 cup
Oil                                3 to 4 tablespoon
Cumin seeds                 1 teaspoon
Bay leaf                        1 or 2
Cinnamon                     1
Onion                            2
Ginger garlic paste       1 tablespoon
Tomato mashed            1 cup
Chhole masala             1 ½ tablespoon
Red chilly                    ½ teaspoon


Method

1.Take maida flour in a bowl.
2.Add sooji to it.
3.Add baking pwd, sugar and salt.
4.Add yoghurt.
5.Cover it with damp cloth and allow to rest for 3 to 4 hrs.
6.after the resting time.
8.Apply little maida flour to hands and knead well.
9.Divide the metrial to equal sized balls.
10.Roll it the big sized poori.
11.Heat oil in a thick bottomed.
12.The rolled poori in hot oil.
13.Wait till it puffs up.





To Make Chhole Masala:


1.Heat oil in a pressure cooker.
2.Add cumin seeds, bay leaf and cinnamon stick.
3.Add finely chopped onion and cook till its golden brown.
4.Add ginger garlic paste and fry.
5.Add mashed tomatoes and cook for two minutes.
6.Now add chhole masala powder.
7.Add red chilly powder and salt.
8.Cover and cook in low medium flame for 7 mins.
9.Now add the soaked chana and mix it.
10.Add 2 cups of water and pressure cook for a7 whistle.
12.Squeeze few drops of lemon juice.
13.Serve hot with fried crispy Bhature.
